Suya is definitely one of Nigerian street food combos that says night life like nothing else. It is a thinly sliced skewered meat, spiced with a mix of spices like ginger, groundnuts and ground pepper, mostly sold by your friendly neighborhood ‘abokis’. Never call yourself a suya connoisseur if you have not tried any of these 6 winning combinations:
1. SUYA AND GARRI
This combination is perhaps one of the most popular suya combos ever. How to do it, ‘soak’ your garri in chilled water and add sugar to taste. Enjoy your spicy suya with the refreshingly cold garri and have suya coated dreams afterwards.
2. SUYA AND BREAD. A.K.A RISKY BURGER
Sliced bread does not cut it for this one, it has to be a soft, fresh-baked loaf – the type that can be torn and squeezed in between your clenched fist into perfect moulds. You can either have it the random way by alternating between popping the suya in your mouth and eating the deliciously spicy meat with fresh onion slices.
3. SUYA AND MASSA
Massa –rice cakes- are more popular in the north. It is made in two variants – sugared and un-sugared. Served together, they complement each other rather nicely, balancing each other nicely in texture and spiciness.
4. SUYA AND NOODLES
Clearly not every time noodles and egg. Many suya joints have evolved into fast food spots, fast food being noodles cooked with suya.
5. SUYA AND CRISPY VEGETABLES
The suya guys have levels too. Some just serve it with onions and send you off on your way. But some, to show that they’ve been to the university to the University of Suya, go the extra mile and serve theirs with crispy fresh vegetables – cabbage, tomatoes, carrots, lettuce and onions.

If you can have barbecued steaks and fries, then suya and fries are not that hard to imagine. Served with yam chips, sweet potato chips or irish potato chips, with a side of vegetables and and some ketchup, the gastronomical gods will be appeased.
