  1. Peel the Yam, and cut it into small cubes, rinse the cubed Yams immediately to prevent it from browning and leave them in water until you are ready to use them.
  2. Cut the plantain lengthwise, remove the core. Chop into chunks, set aside.
  3. Put the cubed Yams, Plantains, stock fish, salt, cow hide, seasoning cube and 4 cups of water inside a large pot. Cover it up and allow it to cook for 30 to 35 minutes.
  4. Stir in the blended peppers, tomatoes and Onions, Palm Oil and crayfish
  5. Use a Potato masher or a wooden spoon to mash the Yam and plantain to your desired consistency.
  6. Stir, taste and adjust for seasoning. Cover and cook for another 5 minutes
  7. Add in the chopped vegetables, stir and remove from heat.
  8. Let it simmer for a minute or two.
  9. Serve hot!







Step 1

Add warm water to pot, add smoked fish and allow boiling for few minutes. Make sure the smoked fish is properly washed.

Step 2

Add crayfish and rich chicken stock and allow to simmer for 2 minutes

Step 3

Add garlic, ginger, onions, black pepper and cayenne pepper to the broth and stir properly.

Step 4

Add assorted beef and ponmo to the mix and leave for 2-3 minutes

Step 5

Add seasoning cubes and a little salt and stir well. Be sure to confirm if the seasoning level is okay before adding seasoning cubes and salt.

Step 6

Add palm oil and leave to simmer for 10 minutes

Step 7

Add freshly roasted chicken in the mix and stir. Add okra and allow it simmer for 2 minutes, then turn off heat.
